Recipe – Whoopie Cake

 

Today I thought I’d share a recipe that my Grandma makes whenever me and Willie go to visit her. She calls it a Whoopie Cake, but I have no idea why she calls it that! And it is nothing like Whoopie Pies, which maybe we’ll make some other time!

Remember: you should always get a grownup or a babysitter to help you make these, at least until you become a chef extraordinaire like me!

Whoopie Cake

Preheat oven to 325 degrees.

Mix 1 cup of brown sugar, 2 egg yolks (the yellow part of the eggs), 1/2 teaspoon of salt, 3/4 cup shortening, 1 teaspoon baking soda and 1 teaspoon cream of tartar together with electric beaters and put in an 8 inch square pan.

Then beat 2 egg whites (the part of the eggs you didn’t need up above) with electric beaters until they are stiff and kind of stand on their own. Add in 1 cup of brown sugar and stir gently with a wooden spoon. Spread that on top of the batter that’s already in the pan.

Bake for one hour.

Whoopie!
